Elodie

Dr. Elodie Dimon is a Research Scientist at the Laboratory of Ecology of Animal Health and Production at the University of Parakou, Benin. She holds a PhD in Animal Production with a specialization in Zootechnics and Environment. Elodie has participated in numerous international training programs and fellowships, including the One Planet Fellowship and the OWSD Fellowship for Women Scientists in the Developing World. She is passionate about developing alternative protein sources to address malnutrition and food insecurity in West Africa, particularly through the promotion of snail farming as a low-cost, high-protein solution.

Dr. Dimon was hosted at the Laboratory for Animal Nutrition and Animal Product Quality (LANUPRO), Department of Animal Sciences and Aquatic Ecology, Ghent University, under the mentorship of Prof. Dr. Thomas Van Hecke. During her 11-week research stay, she investigated the impact of rearing substrate and culinary preparation methods on the nutritional properties and digestibility of snail meat (Archachatina marginata), a promising alternative protein source in Benin. This experience significantly enhanced Elodie's technical and analytical capabilities, enabling her to bring back new methodologies to Benin. She plans to train researchers and students in meat quality analysis and digestion modeling, and to initiate collaborative research projects between her home institution and Ghent University focused on sustainable protein production.
